Slow Cooker Moroccan
Chicken Thigh

Rich with flavour and simple to make. Moroccan inspired spices
create a meal that will spice up any night of the week.

Ingredients for 2 serves

  • 4 Boneless chicken thighs
  • 1 fresh lemon
  • 1 tsp dried ginger or grate fresh ginger root if you have
  • 6 slices of dried citrus
  • ½ cup raisins or currants
  • ½ cup olives (Mixed, green, mammoth, kalamata…. )
  • Baharat and smoked paprika
  • Extra Virgin Olive Oil, Dried garlic, Salt

Method

  • Marinate the thighs with ras el hanout and sweet paprika, Evoo, salt, the lemon zest and dried garlic. Leave In the fridge to marinate. 2 hours is great, 24 is even better.
  • Place fresh lemon slices on the bottom of the slow cooker. Add olives and raisins and the marinated thighs on top. Cover with the slices of dried fruits.
  • Place the lid and cook on slow for 6 to 8 hours or on high for 3-4 hours.
  • Serve with basmati rice or pearl couscous, buckwheat, quinoa… your favourite staple and enjoy!!!
