Pantry Express Lasagne

This is a very convenient lasagna, as all the ingredients are in your pantry
and it is a perfect plan for those saved by the bell days.

Ingredients

  • Lasagna sheets
  • TVP
  • Dried mushrooms
  • Italian herbs
  • 2 tins of crushed tomatoes
  • Mediterranean salt
  • Evoo
  • Extra oregano if you want
  • For instant pantry “bechamel”:
    200 gr cashew, nutmeg, Herbes de provence, Olive oil, salt and pepper

Method

  • In Tierra Bulk Foods we support no wastage in food, so if you want to, you can add any veggies you have in the bottom of your fridge veggies drawer and are looking for some love. It would be good things like carrot, half onion, celery, leeks, tomatoes,spring onion … chop it and put into a pan with olive oil until golden and a bit soft.
  • Add a couple of cans of preserved crushed tomato, into the pan, a big splash of olive oil, salt and 3 big table scoops of Italian herbs and the dried mushrooms and let it chup chup for a bit on low heat around 15 min. Add then the TVP, stir well and turn the heat off.You can add a bit of water or some stock, bone broth or similar and leave cooking some more minutes for extra flavour. Here you have a lovely ragu for this lasagna but also use as bolognese for any pasta or stuffed veggies like eggplant. Add the extra oregano if you want. Place aside.
  • Take a rectangular oven proof tray and place lasagna sheets to cover the bottom. Make layers of lasagna sheets and ragu until you consider. At least 3 or 4 levels. You can do thinner layers of ragu if you want a result of more pasta or the opposite if that is the case. Finish with a level of lasagna sheets. Place aside.

  • We are going to make a white sauce that resembles bechamel by blending a bunch of cashews with salt, pepper, grated nutmeg, some herbes de provence, olive oil and adding a liquid of your convenience like nut milk, milk, stock or water. The result has to be a creamy consistency, runny but not liquid.
  • Add this sauce to the top layer of your lasagna, let it run through the borders. If you like crunchy sides, do not bother to cover every single side of the lasagna. If instead you prefer a softer lasagna, make sure all ends of the sheets are covered with either this sauce or ragu.
  • Ideally top it with grated parmesan, but any other cheese will work, even the hard corners left on your fridge like parmesan rinds.
  • Enjoy, serve with salad if you want and make sure you are doing enough for leftovers…. That is the best!!
  • Bake for around 20 min and grill to make that crunchy top everybody wants…
